Probably because, like DMC they were niche selling titles, as good as they were, and Onimusha 3 and Dawn of Dreams really underperformed. Capcom hasn't ruled out doing a new one, they apparently once said, if the market was there for it.

Tbh I'm actually surprised the original onimusha games never got a HD remake those were some of the best games I played on ps2
